Monday

hello all, today is monday! busy monday.  clothes-washing monday. in our house lately we have been crossing things off our to-do list like crazy. It is really nice. I have been trying to stay motivated to get as much work done as I can, and of course to stay on top of my two bible studies I am in.  During winter, it is definitely hard to stay motivated. Because I am not as active with going for walks, etc, it is hard to find the energy.

Today I made a turkey for supper and some lemon bread. I washed a bunch of clothes and cleaned up mess after mess after mess. I did a lot of dishes too. This week in our house Peter is working on lifting up some of the carpet from the trim boards in all the bedrooms downstairs. He will spray some insulation foam to insulate the cracks under the baseboard trim.  There's about an inch + gap and cold air is coming in !! It gets so cold in all three rooms. I once put a wet towel on the floor by the trim board and the next morning it was hard.... like almost frozen.  Disgusting right... $$ out the door. So last week when I proposed a list get worked on, this was #2.  Anyway. I guess there is hardwood in Kates and our bedroom, pretty positive about the front living room too, which is really exciting to me. Peter would rather have carpet.... i'll try to change his mind! Success

While yesterday was a bad day (in many ways) my Boston Cream Pie was a success. We went shopping in Fargo on Saturday for Peter's Birthday and after getting home at 9:15, the cake was in the oven by 9:45 and most of it stuck to the pan. And crumbled.  But.... to my surprise, I did not panic. You see, this is expected while making this yearly Boston Cream Pie (and has happened before).  I also forgot to mention I ran out of sugar so I had to call my neighbor for some. Thankfully she had enough for my cake. Anyway, So, I somehow got it out of the pan and pieced it back together, waited for it to completely cool, and sawed it horizontally in half... and then that was it. No one even noticed. The filling was exceptional, and the chocolate ganache was really good too!

We made ufta tacos for supper yesterday and with the leftover store-bought bread dough; we are enjoying two loaves of semi-homemade bread.  If you remember, part of my NY resolution was baking more. This counts, right?

Today I have hundreds of pounds of laundry to do... take down our tree (finally) and going to our churchs' woman's meeting tonight. It seems already it's going to be a busy week. A shout out to Kelsey for watching the kids all day at our house... they were in bed when we got home and she even cleaned up the house for us. Well, better go.  I thought i'd share a cute websites too...

Mish Mash of things


Lots of pictures to post. Here are the Easter dresses I bought for the kids. I love them! I couldnt get one of Kate really, she was running around.



The girls have had quite the interest in playing upstairs. I am currently busy cleaning up there.... throwing away old and broken toys, ripped books, and all junk that I have accumulated over the years. It is still a mess up there, but it will get better hopefully sooner than later.  I am working on revamping my scrapbooking room and will take pictures soon. Here are pictures of Kate's new fun activity: sliding down the stairs (supervised of course)

Since we do make a lot of home-made things.. kate has had an interest in helping mix (her favorite book is "Froggy Bakes a Cake"-- she can say all pages by memory! We've been experimenting with pizzas lately. I found this really good dough recipe and thought we'd try new toppings as well. One is bbq chicken (really good!) Egg and Bacon (ok) and Brie, apple, and canadian bacon. The other two are just pepperoni and Hawaiian.

And my personal favorite, supreme with broccoli!!! Even peter liked it! This is just on a peice of french bread though.

leftovers...? what?

Well, we had leftovers for the first time as a family of 4.  That might actually be true, becasue Maddy has just kinda started eating a lot more of our meals, even though she only has 2 1/2 teeth.  Anyway, it was so good, I had to post it. I also realize I had been made fun of by a couple people because I had posted pictures of my food in the past.  So, this means I dont care:

Ingredients:
Smoked provolone cheese
French Bread slices
Leftover meat from a roast
onion
green pepper
Worcestershire sauce
olive oil
mayo

Directions:
Soak meat in a couple ounces of w. sauce for 15 minutes. While that is marinating, saute onion and green pepper in oil. Add meat to this mixture and allow to cook for 5 minutes. Toast slices of french bread in oven (I drizzled a little olive oil on them and let them crisp up a bit at 350). I then added the meat mixture on top and added farmers cheese, though it calls for smoked provolone cheese) and let it melt for about 5 minutes. I added REAL mayo , not miracle whip (I learned that's what Subway uses, I always though it was miracle whip!) and I ate it open-faced, like the picture above. Even peter liked it.  We also served baked potato soup with it. If you want the recipe for that I can post it as well.   Finally, a beef sandwhich that we both liked!

While I am at it, here is a picture of the coffee-mocha cheesecake I made for Christmas. It was a hit, and it really did taste like coffee
